Healthy Pancakes!
Tonight for dinner my little dude requested pancakes, I made these yummy healthy and clean pancakes by tweaking a couple favorite recipes. No need to use box mix or junky ingredients, these babies are delicious, full of healthy fats, fruit, and protein and my son gobbled them up too!
Ingredients
2 eggs
2 egg whites
1 cup oatmeal
1 banana
1 teaspoon vanilla
1 teaspoon cinnamon
Directions
Blend all the ingredients together. Spray pan with coconut oil spray and cook as usual, when they start to bubble flip them and cook a minute longer until cooked through. Top with coconut oil 'butter' and top with 100% maple syrup.
For my #busymoms21dayfix peeps this makes enough for 2-3 people but total counts as 1 yellow, 1.5 red, 1 purple and toppings as an orange and TB. I love that you can eat the entire batch for just those few containers. (you can omit the oatmeal and have zero yellows if desired too!)
